Role Overview:
The Assistant Catering Manager at Empact Group plays a vital role in ensuring the seamless operation of our food service facilities. As a key member of the management team, you will support the Catering Manager in overseeing all aspects of food service operations within the assigned unit. Your primary responsibilities will include managing the daily kitchen operations, implementing and monitoring the production process, managing food and labor costs, and ensuring compliance with HACCP standards. This role requires a deep understanding of the food and beverage industry, exceptional leadership skills, and a commitment to delivering high-quality service in a fast-paced environment.
Key Responsibilities:
- Daily Operations Management:
Assist in the management of daily kitchen operations, ensuring that all food preparation, cooking, and service activities are carried out efficiently and in line with the company’s high standards. You will work closely with the kitchen brigade to ensure that all tasks are completed on time and to the required quality, while also maintaining a clean and organized work environment. - Production Process Implementation:
Oversee the implementation of the production process, ensuring that all food is prepared according to the menu specifications, portion sizes, and presentation standards. You will be responsible for monitoring the quality of food production, ensuring consistency and excellence in every dish served. - Cost Management:
Manage food and labor costs by closely monitoring inventory levels, minimizing waste, and optimizing staff schedules. You will work within budget guidelines to achieve financial targets, while also identifying opportunities for cost savings and efficiency improvements. Your role will include conducting regular cost analysis and reporting on financial performance. - HACCP Compliance:
Ensure that all kitchen operations comply with HACCP (Hazard Analysis Critical Control Points) standards. This includes monitoring food safety practices, maintaining accurate records, and conducting regular inspections to ensure that all health and safety regulations are adhered to. You will be responsible for training staff on HACCP procedures and ensuring that all team members are fully aware of their responsibilities in maintaining a safe and hygienic kitchen environment. - Menu Development and Planning:
Assist in the development and planning of menus, ensuring that they meet client needs and dietary requirements while also aligning with budget constraints. You will collaborate with the Catering Manager to create innovative and appealing menu offerings that enhance the dining experience and reflect current food trends. - Kitchen Brigade Management:
Support the management of the kitchen brigade, providing leadership, guidance, and training to ensure that all team members perform to their full potential. You will assist in scheduling shifts, assigning tasks, and conducting performance reviews. Your role will include fostering a positive work environment that encourages teamwork, creativity, and professional growth. - Strategic and Day-to-Day Operations:
Contribute to the strategic planning and execution of the unit’s operations, ensuring that all activities align with the company’s long-term goals and objectives. You will assist in managing both the strategic direction and the day-to-day running of the unit, ensuring that all operational targets are met and that client satisfaction is maintained at the highest level.
Education and Experience Requirements:
- Relevant tertiary qualification in food and beverage services or culinary arts is compulsory.
- A minimum of 3 years of progressive kitchen management experience is compulsory, with a strong track record of delivering high-quality food service in a high-volume environment.
- Experience in managing operations within budget guidelines and achieving financial targets is essential.
- Previous experience in hospital or healthcare catering is highly advantageous, as is a strong knowledge of special diets and nutritional requirements.
- A solid understanding of HSE (Health, Safety, and Environment) standards and practices is essential, particularly in the context of food service operations.
Skills and Competencies:
- Catering and Culinary Expertise:
In-depth knowledge of the catering industry, ranging from fine dining to restaurant dining, with a strong understanding of food trends, presentation standards, and menu planning. You will need to be well-versed in South African and industry-specific laws and regulations related to food service. - Customer Service Excellence:
Strong customer service skills, with the ability to anticipate client needs and deliver an exceptional dining experience. You will need to be proactive, professional, and committed to maintaining the highest standards of service. - Leadership and Management:
Proven management skills, with the ability to lead, motivate, and develop a diverse team. You will need to be an effective communicator, capable of balancing multiple priorities and managing complex operations in a fast-paced environment. - Financial Acumen:
Strong financial management skills, with the ability to manage budgets, control costs, and achieve financial targets. You will need to be analytical and detail-oriented, with the ability to draft and extract reports and make informed decisions based on financial data. - Health and Safety Knowledge:
A thorough understanding of HSE standards and practices, with the ability to ensure compliance with all relevant regulations. You will need to be knowledgeable about HACCP standards and committed to maintaining a safe and hygienic kitchen environment.
Additional Considerations:
- This role may require flexibility in working hours, including weekends and public holidays, depending on the needs of the unit.
- The position is based in Melmoth, KwaZulu-Natal, and may involve occasional travel to other sites as required.
- This is a contract position, with the potential for extension based on performance and business needs.
