Purpose of the Role

The Kitchen Supervisor will play a critical role in ensuring the efficient and effective operation of the kitchen. This position involves overseeing kitchen production, maintaining high standards of food quality and consistency, and managing inventory to support the smooth running of daily operations. The successful candidate will collaborate closely with the Catering Manager to ensure that all culinary operations meet company standards and client expectations.


Key Responsibilities

  • Operational Oversight:
    • Supervise and coordinate daily kitchen activities, including food preparation, cooking, and presentation, ensuring that all tasks are completed in a timely and efficient manner.
    • Monitor kitchen staff performance, providing guidance and support to ensure adherence to company standards and food safety regulations.
    • Ensure the kitchen operates smoothly, with minimal disruption, and address any operational issues promptly.
  • Quality and Consistency:
    • Maintain high standards of food quality and presentation, ensuring that all menu items are prepared and served according to established recipes and standards.
    • Conduct regular taste tests and quality checks to ensure consistency and excellence in all dishes.
    • Implement and enforce standard operating procedures to maintain consistency across all food products.
  • Inventory Management:
    • Assist with inventory management, including tracking stock levels, ordering supplies, and receiving deliveries.
    • Monitor inventory usage and waste, making recommendations to optimize stock control and reduce costs.
    • Communicate inventory needs and any issues to the Catering Manager to ensure timely replenishment and prevent shortages.
  • Staff Management:
    • Train and mentor kitchen staff, ensuring they are equipped with the necessary skills and knowledge to perform their roles effectively.
    • Conduct performance evaluations and provide constructive feedback to team members.
    • Coordinate staff schedules and manage shift allocations to ensure adequate coverage during peak times.
  • Health and Safety Compliance:
    • Ensure compliance with health, safety, and hygiene regulations, including proper food handling and sanitation practices.
    • Conduct regular inspections of kitchen facilities and equipment to ensure they meet safety standards.
    • Implement and maintain procedures for safe food handling, storage, and preparation.
  • Client Interaction:
    • Work closely with clients and the Catering Manager to address any special requests or dietary requirements.
    • Ensure client satisfaction by delivering high-quality food and excellent service, and handle any client concerns professionally.
  • Administrative Duties:
    • Maintain accurate records of inventory, orders, and staff performance.
    • Assist with the preparation of reports and documentation as required by the Catering Manager.
    • Manage kitchen-related administrative tasks, including scheduling and ordering.

Education and Experience

  • Educational Background:
    • Matric (Grade 12) is essential.
    • Relevant tertiary qualification in food and beverage services or culinary arts is compulsory.
  • Professional Experience:
    • Minimum of 2 years of progressive kitchen management experience is compulsory.
    • Experience with stock control, ordering, and receiving is essential.
    • Previous experience in a similar role within a high-volume food service environment is highly advantageous.

Knowledge, Skills, and Competencies

  • Culinary Knowledge:
    • Extensive knowledge of various catering environments, including fine dining and restaurant dining.
    • Familiarity with South African and industry-specific laws and regulations related to food service.
  • Management Skills:
    • Strong management skills, with the ability to lead and motivate a team effectively.
    • Proven ability to manage kitchen operations, including staff supervision and inventory control.
  • Communication Skills:
    • Excellent communication skills, with the ability to interact professionally with clients, staff, and suppliers.
    • Ability to convey instructions clearly and provide constructive feedback to team members.
  • Computer Literacy:
    • Proficiency in computer applications, including MS Office, to manage administrative tasks and generate reports.
  • Attention to Detail:
    • Exceptional attention to detail in food preparation, presentation, and quality control.
    • Ability to identify and address potential issues before they affect kitchen operations.
  • Health and Safety Knowledge:
    • Strong knowledge of health, safety, and hygiene practices in a kitchen environment.
    • Commitment to maintaining a safe and clean working environment.
